Right now Im using proxmox on single intel nuc with wd red hdd. Fine.
Im thinking about install proxmox to SSD hdd and running all vm from usb 3.0 wd red hdd.
is it possible?

Yes, you can add the mounted external HDD as Directory storage and use it just fine. You even should be able to setup LVMThin or ZFS on the HDD and add it as respective storage.

Your mileage with an external HDD may vary and is in general not ideal (often a bit slower (bus dependent), may be not as reliable (it often needs to resist more and bigger "bumps")), as you probably know.
Backup the things important to you. For personal use it may work just fine, though :)
