I have the same issue in the latest version. The space under /dev/pve/data is not visible. If I mount it in /etc/fstab, it fails to boot, it stops and asks for the root password for maintenance. so how do I use Proxmox and also use the data wasted under /dev/pve/data? Ths should be usable and mounted by default.
