Who is using a RAID controller?

Should I sell the RAID controllers in each of my R740s and just put Mini H330 HBA controllers in?

The general consensus seems to be to use ZFS, so why waste a PCIe slot on these things?

Depends on your performance requirements and features you want to use.

If you want to run RAID5 with BBU (maybe because of good experiences with other hypervisors in the past) then don't make the mistake of thinking that ZFS RAIDz1 will behave the same (as it will be slower and have less space available making it not really suitable for running VMs on).
