Steps to setup a new server using Proxmox Containers with Docker

I read some threads before here with similar questions but I think I couldn't find what I'm looking. First and foremost I'm someone that is new to Proxmox and Linux. I just got a NUC to create a new home media server. I feel that there are different ways to design the server. In a high level, can I follow this sequence below of steps to have a nice start?

1. Setup Proxmox
2. Create a LXC container with a docker template: https://youtu.be/faoIeeZZ6ws
3. Copy the container template and install a Debian Kernel
4. Copy the container template as needed to install applications and services (maybe drivers as well?)
5. Fire up the server and maintain the distro desktop environment
6. Config Emby and Plex

Am I overcomplicating? Is this a valid design to setup a home media server?

It seems that with this I'd consume a lot of time and work in the beginning but in the future if I need to transfer or move my server this would payback. Also I could have different distros, not that I can't have multiples only using LXC but with docker I'm adding an extra layer of applications shared. Is it true? Is this design feasible?

Also, what is Turnkey? Is it recommended to bring it to the equation?
