I've been a bit busy, have marked this converation as solved. I didn't test it, because I'm too busy and have already spend many hours on this. But I'm sure the solution here works https://bugzilla.proxmox.com/show_bug.cgi?id=3729#c6 (comment #6) and hopefully the fix will be in the next release (line 156 in /usr/sbin/proxmox-boot-tool, just add "--graceful" as explained), so nothing is unclear for me anymore. Thanks all!

Hey all, I know this thread is a few weeks old and marked as solved. But since @virtManager wasn't able to go back and confirm I just wanted to comment that I just used the method linked to install Proxmox 7.1 on an HP T730. It was getting this same error and failing in the GUI installer trying to install to a single disk ZFS RAID0. After the GUI installer failed, I rebooted into the debug installer, followed the linked chroot steps, edited line 156 in /usr/sbin/proxmox-boot-tool to add the --graceful switch and reran the "proxmox-boot-tool init /dev/sda2 " command. It was successful and added the boot loader entry. After rebooting the machine all I had to do was reimport the rpool once and everything seems to be working perfectly normally now.
