Unable to restore a UEFI vm using VEEAM in Proxmox 9.x

Hi,
We are migrating from vmware to proxmox and have been using 'veeam backup and replication' for backups while we have vmware.

Now we are facing a problem in the restore step, since we want to possibly restore some backups directly into proxmox. Some UEFI vms are unable to boot, we are aware that there are some steps we need to do before we could think of having a working vm so i'm going to paste them right under here.
Code:
connect a debian iso in order to enter the machin in rescue mode
chroot to root fs (in our case a logical volume)
mount /boot and /boot/efi

cd /boot
dracut --force -v /boot/initrd.img-6.1.0-41-amd64 6.1.0-41-amd64
update-grub

remove the iso
stop the vm
start it again

and it should work, and we had luck making it work a couple weeks ago.

Now we are not able to make it boot again. It gets stuck right after showing the grub menu, while mounting logical volumes probably. Here a couple log lines:

What changed ? I don't see any error at the end of that screen capture. Can you capture the boot output in text using serial console ?
I know this requires booting from a Live CD to modify your boot parameters in your VM, maybe worth the effort.
