Trouble with write access on smb share mount into LXC.

Hi all. I've been reading forum after forum for several weeks to try fix this and just cant seem to get it sorted. So I do apologise in advance if this is an easy fix or asked a million times, but it's becoming quite frustrating.

My current situation is:
LXC 1 running samba, allowing network access to zfs storage inside lxc > the goal is to be able to access/read/write to this through various other containers and vms as well as my PC, I may rip media on my personal computer and then easily transfer across.

I am aware there needs to be workarounds to do this successfully via an unprivileged container, so I have mounted my SMB network share onto PVE host, with the the step of then mounting that into LXC 2 (jellyfin in my case).

I can access the smb share successfully from my PC and VM's, along with read and write access.
The Jellyfin LXC did work perfectly 2 days ago, but the issue arose post lxc reboot. No changes were made by me.

The Jellyfin LXC CAN read the directory, so it is mounting succesfully, but even as root user inside of the lxc, I get permission denied for writing.
I have mounting set up on the pve/host in fstab, and I have tried several guides/methods as well as following docs but adjusting all of the UIDs and GIDs with uid + 100000 etc still dont seem to work. Has anyone got any ideas? Jellyfin can succesfully play media, but any scheduled tasks that generate any files are not being written to the respective folders.
