Linux VMs in Proxmox 8.xx gets corrupted but proxmox host no issue

You can never know for sure. Remember you have not got a "clean default" install.
I have install more than 5-6 proxmox installs over the years like this and it was okish until now. and now maybe the issue is elsewhere but I will keep what you say in mind.

If I install proxmox directly from the proxmox iso do I have the same packages available (to install later) that I get when I install over debian or are there less packages?

For anyone that will come here having the same issue I am reporting that I was able to fix the issue by replacing the crucial ssd with a Samsung 870 evo 1TB ssd. I know this hard disk is way better than the original ssd that I had (and I would probably would have gone away with a simpler less expensive tlc ssd), I selected this drive for two reasons:

1) I am using encryption on my hard drive and I wanted to copy everything over to the new one using dd. Since there is encryption on my system I needed to copy everything offline and the new drive should be at least the size of the previous one. I did not wanted to get a new drive with 512GB and realized in the end that the new one is a few bytes less than the old one and can not copy everything so I decided to go with a larger one. Samsung price was closer to the other ssds that I had found anyway.

2) Samsung 870 evo supports dram and is supposed to be one of the best ssd out there :).

Before I installed the new ssd I also tried to stress out the system (cpu, memory EXCEPT of course the crucial SSD) and found no errors.

I aslo contacted crucial support and according to their respond "...The Crucial BX500 utilizes an SLC-mode cache, which allows it to manage fast write speeds for general use and short bursts of data transfer. However, when the SLC cache becomes full, the drive switches to QLC NAND for caching. While this ensures continued operation, the write speeds may decrease significantly, particularly during large file transfers or sustained writes. ...". I am guesting according to their response that this drive should not be used for the reason I am using it :(

So YES I now believe that the crucail ssd is really not capable of handing anything significant and should ony be used in scenarios where only small writes are needed.

For now Samsung 870 evo 1TB works great and I hope it stays that way.

I believe so. I've never had a package that I use in Debian not available in (native) Proxmox.
