Help with storage setup

Hi Community,

I am a very newbie and just installed proxmox 2 days ago used to run docker containers on a laptop before the whole homelab thing.

Please help me decide storage setup, this is my setup/plan:
  1. 1 X 1TB Nvme for all vms and proxmox (1 more will be added later)
  2. 1 X20TB drive for media. more drives will be added in future, backup is not important here but avoiding complete failure is.
  3. 1X20TB drive for important stuff that I will backup 1:1 later.
The problem is I dont have all drives right now so I dont know how to setup storage. I see everyone using ZFS pools but I I just have 1 + 1 disks now and plan to add more in the future. I dont want to delete or juggle my storage everytime I add a new drive.

How do I setup my storage so that I can add more drives in the future, dont lose performance and its not painful to move data around. ?
