I see that ceph pacific is now available in repo but it is only available for bullseye and not for buster release.
How can we test it any documentation will be useful
 
As far as I understand, you need to go to 6.4 to migrate to 7 as there is no tool like pve6to7 in repo which can help from 5 to 7

As you run Buster (Proxmox VE 6.x), you need to upgrade to Proxmox VE 7.0 beta and then to Ceph Pacific.

Q: Can I upgrade my Proxmox VE 6.4 cluster with Ceph Octopus to 7.0 beta?
A: This is a two step process. First, you have to upgrade Proxmox VE from 6.4 to 7.0, and afterwards upgrade Ceph from Octopus to Pacific. There are a lot of improvements and changes, so please follow exactly the upgrade documentation:
