With that, you leave the realm of what can be done via the Proxmox VE tooling, and you need to interact directly with the Ceph cluster. What do you mean with object storage? S3? Then check the Ceph documentation. I think https://docs.ceph.com/en/latest/radosgw/s3/ should be a start.
I have not done it myself, but it should be fine doing it on the existing Ceph cluster. It might be a good idea to create a separate pool for that.
Since this is not something used by Proxmox VE, knowledge here in the forum might be limited, and you will most likely need to consult the Ceph communities / mailing lists if you have some issues.
While there is no plan to integrate the management of the Rados GW (providing the S3 compatible API) into the Proxmox VE tooling and GUI, you can still set it up with Ceph running on Proxmox VE. All the packages needed should be available.

Did the ceph command alter the centrally used ceph.conf?
Not yet. I mean we have done it directly in ceph (so no proxmox). Maybe in the future this will also be managed from proxmox.
