3-Node Cluster starting with 1 Node

We are currently using 2 identical KVM servers which are manually managed (not Proxmox). We want to move to a 3-node HA Proxmox PVE cluster using Ceph for storage.

We only have 3 identical servers in total (2 of which are currently in use), and are looking for a way to migrate to the new Proxmox cluster as seamlessly as possible. We operate 24/7, but we could run on one KVM server while we install the new Proxmox cluster; the third server would be added once the new Proxmox set up is running reliably and we can shut down the KVM server.

So I am looking for some basic guidance or tips on how to set up a 3-node Proxmox cluster with only 2 nodes to begin with - the third will then be added once everything is working. Any good tips?

I also have a question about support: We will be subscribing to the Basic support package for 3 CPUs (3 servers) - is this sort of set up issue included, or would this be out of scope? I'm thinking it may be wise to subscribe to support before attempting the install in case we need help...
