VROC is pretty much "invisible" to the OS. You'll need to enable it from the UEFI/BIOS and after enabling it and rebooting, you'll see a screen with a hot key to press in order to configure the RAID levels. After configuring it, Proxmox should see your new RAID just as other disks.
