UPDATE: Fixed the issue. I ended up doing something wrong with the PCI passthrough. The problem was related to a message I was getting on boot. "Reading all physical volumes. This may take a while..."

UPDATE: Apparently the problem is related to changing the grub config file in order to set up PCI passthrough to "GRUB_CMDLINE_LINUX_DEFAULT="quiet intel_iommu=on" I'm not sure why it does that. When I change it back to the default "GRUB_CMDLINE_LINUX_DEFAULT="quiet" It still says "Reading...
