I actually think I just discovered how to do this very easily via the GUI!
For those in the same boat as me, it's found under Datacenter > Storage, not under the PVE node itself. Hopefully this helps someone eventually!

Add a second CD drive and attach the latest Virtio ISO to it. Then during installation you can click on the Load Driver (Treiber Laden) button.
The driver should be in the `vioscsi` directory. After the driver is loaded you should see the disk.
