After some additional testing, setting the lifecycle to "Keep only the last version" did the trick.
This lifecycle setting is the same as a custom rule on the root, a null hide after upload, and a value of 1 day on delete after hide.

It could be telling that it's not permitted because it's full as well, df -h /mnt/pve/NAS_NFS/ is alright?
