there is a bunch of readily made images for xen available here: http://www.jailtime.org/ but how would i go about to get them working?

OS templates are already available for Proxmox VE (OpenVZ OS templates), so why do you want to convert this again?
well first of all... just because 
second i cant seem to get Gentoo working (my preferred distro) tried the template found here: http://www.funtoo.org/linux/openvz/~x86/ but i get some weird errors that i cant login with ssh (and it dont start the ssh server automatically either but that was no biggie)
