What's the different between a Storage of type 'cephfs' and 'Create CephFS'?

exactly. you already have one cephfs that is configured as storage. the "Create CephFS" button allows you to create more ;)
 
So, here's the thing. There was nothing in that list. Then I clicked Create CephFS ... now I have that in the list. So, can I delete that and it won't delete my underlying cephfs system? Does the underlying cephfs not show up there? ... I'm not sure how I'd delete that now anyway.

It kind of feels like the first time I clicked Create CephFS it just loaded up the existing file system into that gui. You are saying no, but I feel unsure, is there a command I can run that will list out two cephfs file systems you'd be willing to share?

the two entries named "cephfs" are referencing the same thing. one is on the Ceph level, where a cephfs called "cephfs" exists. the other is on the PVE level, where a storage of type "cephfs" called "cephfs" exists, which uses the cephfs called "cephfs".

you could also call your cephfs or your storage differently, but that doesn't really make it less confusing, a 1:1 mapping of storage name and underlying pool/cephfs/.. name is what is usually used.
