The server became unresponsive while a PBS backup was running. I stopped the backup, and the server is now functioning again. It seems the backup process caused the issue.

You have to give more information, is the pbs an external server ? or it's a vm running inside the PVE ? what is the network speed of the pve ?

if you don't use fleecing, the backup will sit between guest I/O and the actual volumes. if the PBS system is too slow, it will cause I/O issues in the VM.. without more details, nobody will be able to tell you whether that is the case though..
