Alleged. This feature (interrupt coalescing) is already a thing that happens on many professional network cards. Yes, making it more aggressive and buffering more data will save interrupts/power, but latency will get worse, buffer bloat has been an issue for a long time, especially on consumer hardware.

As always “it depends” on your application, priorities etc I wouldn’t just enable it and expect a zero-cost power savings. Most of my CPU are at higher power levels to reduce Ceph latency for example.
