Proxmox cluster with diskless node

We are planning to build a cluster with Proxmox 6 and Ceph. For now we would make use of 2 nodes with OSDs, but Proxmox has a minimum of 3 nodes.

Question: Can we plan the 3rd node as monitor only (quasy diskless)?

You cannot run Ceph OSDs on two nodes.

(or more detailed: you can, but you the risk of data loss is quite high and you do not have HA storage).

This is clear to us. The question is more if one of the server dies - will we still have the data on the second one (like the DRBD di)?
