Newly installed server, Dell R720, I had the idea to use all 4 NICS in a blanace-ALB bond.
Made that in the gui and trid to reboot the server, I got an error saying that ifupdown2 was missing.
So I ssh'd to the server and restared it.
So back in via ssh, thought I had to install that missing ifupdown2, so I did, but that was a strange install, I hade to touch '/please-remove-proxmox-ve'.
After that I was suggeted to purge promox-ve, being stupid I did what it said. All went fine after that.
The new network config was in the file interfaces.new, so I renamed the current to .old and removed .new from that bond one.
Restarted.
I can ssh into the server no issues there, but no gui, but didnt I remove that with please-remove-proxmox-ve ?

I imagine that your problems started because of misconfigured repositories [1]. This is usually the case when apt is suggesting the removal of proxmox-ve.

Made that in the gui and trid to reboot the server, I got an error saying that ifupdown2 was missing.
To clear up this confusion, there are two options in regard to network configuration in the GUI. If ifupdown is installed (default), the node must be rebooted for network changes to take effect. If ifupdown2 is installed, configuration can be applied instantly without reboot [2].

So back in via ssh, thought I had to install that missing ifupdown2, so I did, but that was a strange install, I hade to touch '/please-remove-proxmox-ve'.
I believe this message was given due to misconfigured repositories [1].

I can ssh into the server no issues there, but no gui, but didnt I remove that with please-remove-proxmox-ve ?
You removed proxmox-ve from the server. Proxmox VE is essentially just some programs and services that run on Debian (well this is a massive oversimplification, but still). By removing proxmox-ve, you still have the underlying Debian server, just not Proxmox and its features (such as web gui).

At this point, the simplest course of actions are to do a fresh install of Proxmox, and make sure to configure the correct repository [1], or to reinstall proxmox-ve on Debian [3].

In the end I had to reinstall Proxmox, since without a gui it is not fun to work with proxmox. :)
Thank you for the insight!

Happy to help :)
