I want to setup a NFS server (with ZFS) for my Proxmox nodes. Is there a complete NFS OS (booting from USB Stick) with ZFS support?

USB stick dont work for a long period. I think they are not designed to by plug-in to electricity 24/7/365. In the past 2 years I changed 3 times. Same happend to my cousin.

true, you should atleast look for some durability tests before choosing your usb stick, keep enough space, etc...
anyway, the mentioned nas distributions (especially the freebsd based) have some special imaging to not write anything onto the usb stick, afair they just write everything to tmpfs.
probably a SATA dongle can be an alternative, we use them for our vmware esxi hosts.

We always use Proxmox as Backupserver. 2 EVO SSDs for the OS and HDDs nummber, depending on what you will. We have most RaidZ10 with 6 or 10 disks. 16-32GB Memory. PVE as Backupserver is working perfectly. In worst case you can start your VMs directly on it. PVE-zsync is your friend ;)

what has this todo with the OP's question?
