I'm planning on using proxmox on an HP Proliant server, which I have running multiple hdds. I was wondering the following two things, 1:Can Proxmox add Vms into the OS drive, or is that there only for the storage of the operating system files, and 2: Will proxmox be able to make use of all of my drives? or the one it's installed on.

You can run anything from only on disk, if that's what you're asking about.

2: Will proxmox be able to make use of all of my drives? or the one it's installed on.
That depends on your install choices.

With a enterprise grade server like the Proliants, there is often an hardware RAID controller that will manage the "multiple drive" part of the question. Just create a RAID1 or RAID5(0) with all your disks in your setup you like and Proxmox VE will see one virtual disk that consists of all disks you have. It'll be installed on the one disk and it is used for everything.
