no, not if they would end up being on the same disk. And even if you had more than one disk, I'd really recommend letting the installer setup booting from ZFS. So the best way to achieve that is to create backups of your VMs/CTs, then reinstall your PVE host with ZFS, then restore the backups.

/etc/pve/storage.cfg, or generally things under /etc/pve/ in case you have configured a lot. /etc/network/interfaces would be for your network config, if it is more complex.
