Migrating Plex From Windows Server

Now that I have Proxmox setup as my dns/firewall/router etc time to migrate my server setup.

So currently have

Dell T610
SATA SSD C: 120GB Server 2022
SATA SSD D: 256GB Plex Media Server
SAS Raid-5 E: 18TB
|------> Plex Storage ( Windows Share Any User)
|------> Bittorrent Storage ( Windows Share Any User )
|------> General Storage ( Windows Share Any User )

Will be creating new setup on spare server and then transferring data, so family don't crucify me for loss of Plex

Dell T620
SATA SSD C: Proxmox
|------> Torrent container
SATA SSD D: Plex Media Server container, I know I have to create local storage
SAS Raid-5 E: Best/simplest way to create storage and replicate shares?
