I have connected an iSCSI 1TB drive from a ReadyNAS 2100 4TB SAN unit, but when i try to create a virtual machine to set the HDD to use the iSCSI i only get the option to assign the 1TB iSCSI as the HDD for the VM rather than it being set as an addition storage HDD for the Cluster... any ideas what I have missed?

Ok, now using NFS share - is there anyway of locking it down so that only my Proxmox host can access the NFS share? I cant find anyway of setting the username and password in Proxmox for the NFS Share

export the nfs to your proxmox ve ip´s only.
