I wonder if it's possible to turn that off, other than by buying a license?

For the record, I'm not against getting a licence per se, but for a three NUC setup, it would appear to cost me 315 EURO + VAT a year for a community license which feels too much considering my outlay and this is really for fun and experimentation, not business; I would maybe spend 75-100 Euro max a year on this setup of three consumer-grade NUCs. I don't know if you have ever considered a sort of hobbyist license, which maybe gives slightly less frequent repo updates (maybe skip every one or something) and turns the nagging reminder/warnings off?

There is no setting for that. Personally, I find it only a very minor inconvenience for great free software. It's also open source, so you can change the code any way you want to (just don't distribute it as Proxmox).
 
Thanks, I just changed the code. Be good to have an option though, as I imagine I'll need to do it after each update.
