Edit the backup log

Is there any way to edit this backup log?

I would like to add a script to notify me by means of a message or something like that when the backup is finished, this outside of the mail system that Proxmox has.

the log just contains the output, you cannot "add a script there". vzdump supports hook scripts that can do arbitrary things at specific points in the backup execution:
