So I didn't have to do any of this.
All I did was use the built in Proxmox 'import' tool to import straight from VMware. I did notice the two 450gig disks were showing as SCSI in the wizard but I just left it and started the transfer. After the process was over, it wouldn't boot from SCSI so from inside the OME VM's GUI, on the Hardware tab, I detached the two SCSI disks, then hit Edit and set them to SATA, then reattached each one, then under Options set the boot order.
Like someone earlier said it can take up to 20 min to boot but after it did boot and all the services to finish starting, It came up to the config page. I just went through the OME admin settings and NIC settings and done. All my iDRAC hosts settings, catalogs settings etc. were still there.
