Which character set should be set, ISO or UTF?

Where is this set correctly in the Proxmox Mail Gateway?

We have the problem that emails are displayed incorrectly to the recipient and therefore do not get through:

&lt<a.name@anywhere.com>&gt

I see - It is already set to utf8 by default.
I assume the fault is on the receiver side.

please share the logs and at least the headers of such a mail - else this cannot be debugged sensibly.
