So I can see from the official proxmox documentation that installing a PBS as a VM is a supported method

It can be installed bare-metal on dedicated hardware or in a virtual machine on all leading virtualization platforms.29 June 2023

I'm a little confused if the PBS VM itself can be backed up on the PVE hosting it, I can't see how this is accomplished

Hi,
you can always use a different storage target for backups of the Proxmox Backup Server VM. This might be a different PBS instance or a storage capable of holding VMA backups. Of course it makes no sense to backup the VM to itself.

Yes

My idea was to backup the PBS on the PVE host without targeting the PBS but just a connected NFS storage volume
