Just FYI, same problem with a NFS mount. I've tried to backup a small VM over VPN+NFS. The backup works but the task never ends.
With a backup done on a local folder, it says "TASK OK" at the end.
Any idea ?

I've just configured a new Proxmox installation -7.4.16) and tried to configure the backups.
I've mounted a CIFS share hosted on my NAS over an OpenVpn tunnel. Tunnel is stable, CIFS share is created properly.
However when trying to backup VMs, it works... files are transferred to the...
Replying to myself - I found this tuto describing how to add a new partition to a Volume Group in order to expand free space.
It is based on Debian commands but it works well.
