I use a PBS server for that kind of thing. You can do a backup of all the running VMs to the PBS server, down one of the VMs, and do a live restore of it on the new PVE server, total downtime is about a minute as the VM boots at the start of the live restore.
The other day I had a drive problem, so I restored the VM from a 2 day old PBS backup onto another server, before I did that, I took a snapshot of /var/mail using proxmox-backup-client. When I tried to restore /var/mail it complained the files already exist and wouldn't proceed. Is there a way...

Update, ran out of ideas, so I rebooted the PVE 7.0 server and the VM is able to do backups to both PBS servers again.
I has rebooted the VM several times just in case something apt updated needed it.
So in the end it was the PVE 7.0 server reboot that cleared the problem.

I moved a FreeBSD 9.3-RELEASE vm across from a Proxmox 6.1.5 server to a fresh 6.2.4 server, just using local drive (xfs) storage for the VM and it seg faults just after the FreeBSD kernel loads on 6.2.4.

I set up a glusterfs test on two identical Proxmox servers to try and learn a bit about it.
