If the target system cannot ACK the writes fast enough, the PVE-Host stalls because of the IO-waits. Fleecing reduces that because it ACKs & write locally first before sending to the target system. Only works on fast local drives though.

Backups kann man ja auch am Tag ausführen :-) (und bitte noch die anderen Infos nachliefern, habe meinen Beitrag editiert, danke). Wir benutzen hier XEON Silver 4114 CPUs und machen 25 Gbit ohne Probleme voll. Scheint also irgendwo der Wurm drin zu sein.

Either use NFSv4 (port 2049) or otherwise mountd on 892 is required if you want directory-listings/mounting on v3 aswell.

Those are snapshots named "migrate". Whoever created these might have had a reason. Are you the owner of said machine? Take a look into each of these VMs: You should see the snapshots there. Do you know what a snapshot is and does and is made for?

Finde ich jetzt etwas sehr schroff formuliert. Die Dinger haben schon ihre Daseinsberechtigung. Aber ich bin bei Dir, ich würde auch immer einen PC von HP (Elitedesk Mini) oder Lenovo vorziehen. Sind eben ausgereifter als die NUC-Teile, wenn auch nicht viel größer.

Ist alles normal. Immich hat nunmal im Hintergrund viele Tasks laufen wie Erstellung von Miniaturansichten etc. Das braucht CPU und erzeugt Last wie du siehst. Last muss abgeführt werden, das geht über die Temperatur. Mini-PCs sind nicht für 100% Last 24/7 ausgelegt. Was du versuchen kannst ist...
