How To Relay Incoming Mail to Mail Server?

Before installing PMG 5.0, here's what I can't seem to find an answer in the docs for.

Let's assume the mail server and the PMG server are VMs on 2 separate Proxmox nodes. Every domain's MX record points to the PMG server. PMG filters incoing emails for the domain and then what? How does PMG know to send the legitimate emails back to the mail server?

Also, when a quarantined email is released by the user, how can PMG be made to forward it to the mail server?
