JThe solution is as easy: Don't use the qcow2 snapshot feature itself and just take the one of the filesystem which servers the images via nfs. Then there's no wait of minutes or hours for doing anything as all is possible in a handful of seconds.

For home lab, it's whatever you want, or need, I suppose. But with software RAID, for simpler troubleshooting and recovery from faults, I would lean towards a mirrored array for boot, rather than single parity, dual parity or even RAID10. So...
