What do you mean by extensively? Most people use it as their only virtualization platform in various setups for many years, even decades. A few years ago, there was a post by Proxmox stuff about the install numbers, yet I cannot find it anymore... -

Try to update the firmware of your Samsung drives. Try to disable PCIe ASPM in BIOS or any other power saving feature. Check if the drives overheat -> improve cooling. Could also be an issue with the pcie -> m.2 adapter ...
