I ran into that as well after configuring LE. The fingerprint is mandatory when lacking 'real' certificates.
Once your nodes have LE certs, you can leave the fingerprint empty.

As for the stray 104-image of 11 GB in /var/lib/vz/images/104: I'm not allowed to delete it, as container 104 exists.
It was not my intention for 104 to use it, and the config seems to back me up:

If a VM is off the “dirty bitmap” is lost…there should be a line at the top of the log section to that effect.
All backups in PVE are full backups. The dirty bitmap just knows to skip unused changes. PBS deduplicates either way.

Portainer ist doch nur eine Verwaltungsoberfläche für Docker und hat ja mit LXC erstmal nix zu tun.
Bei deinem Setup würde ich ein oder mehrere VMs für Docker verwenden, in dieser VM installierst du dann natürlich Portainer oder als Alternative...

I would like to report what appears to be a kernel regression affecting VFIO passthrough.
Summary
On my system VFIO passthrough works correctly with kernel 6.17.9-1-pve, but after upgrading to 6.17.13-1-pve or 6.17.13-2-pve, DMAR faults...
