I solved my problem. Problem was I'm incorrect detect network card on Proxmox Server.
Now I correctly detected and my VM is work fine!

Well, if the PF isn't bound to XE, than I don't have the subs, so need map it only to the subs to vfio-pci. Which proxmox doesn't do for some reason in my case.
I'll assume this is a durability issue with the SSDs and not an issue with Proxmox configuration. I've sent an email to Patriot, and I'll purchase a pair of the SM863 2TB.

They appear to have a few different formats, one of them being m.2
The SM863 sounds pretty tempting, I'll probably head in that direction as it's about half the price or less.
