Welcome to the party! In our case rebooting PBS into kernel 6.14.11-4-pve successfully workarounded the issue. -

IWenn ich das richtig verstehe, greifst du mit Windows per NFS zu. Das ist immer langsam, da der Windows NFS Client nicht so doll ist. Bitte mal mit Linux oder direkt mit Proxmox testen.
