I kept on getting an access denied message from BIOS and no boot drive was found.
Long story short, if you get the same error, disable secure boot in the VMs bios and off you go.
so it seems that the easiest solution is to do a global rewrite at the postfix level.
add to /etc/postfix/main.cf
#adress rewrite
smtp_generic_maps = hash:/etc/postfix/generic
and to /etc/postfix/generic
root@yourdomain.com...
I will do further testing in a virtual environment for the sake of learning the steps better.
