Ok after further testing I was able to get the display to connect reliably using a custom edid and kernel args on the guest os. I haven't seen this error re appear.
However I believe the reset bug is still happening intermittently with this...

no. Not really, it is really lightweight. I'd recommend a simple debian CT and installing[1] it like a normal debian package, or a VM and use the provided ISO.
Note that it doesn't have to run on PVE, it communicates to PVE/PBS only...
