ZFS 2.0.5 contains bugfixes for issues that hang ZFS threads and prevent send/receive from functioning (until the next reboot). Particularly (from the changelog):
Do not hash unlinked inodes #9741 #11223 #11648 #12210

It was released on June 23, 2021 and we're eager to get this change on to our systems. It doesn't appear to be available yet in any of the PVE repositories for Buster or Bullseye so this is just to highlight that there are important issues resolved by this release and to request a package update.

The releases side-tracked a new update, a colleague was already quite eager to get it in, but even with all the good-looking bug fixes, which we'd naturally like to see too, we did not want to risk regression potential by fast tracking that update.

We'll try to relase that as update soon!

I imagine this release is not really on anyone's radar; openzfs 2.1 has been released.
2.0.5 is a bugfix release while 2.1.0 is a new branch with functional ZFS changes that increase the scope of the change. I'd be happy with either one.
