Windows Server 2016 Virtual Machine Restore from PBS

Ran into some difficulty with a most recent Windows Update and the machine not working after.
I have my operating system installed on C:\ and the data installed on D:\ drive, Two virtual disks, but part of the same VM.
Would I be able to restore to a known working Operating system with C:\ and just replace the drives D:\ with the most recent one to salvage the data?
Is there a simple way to do this? I have tried restoring both before and then replacing the the drives with the new one.
Can I use PBS Restore to fix this issue?
