Says nothing.... ZFS...

But yes.... Hardware-RAID is not recommended for ZFS... use a HBA when you want to purely go with ZFS.... and use it RAID-10... even in a Hardware-Raid RAID10 would be the better way to go for high IOPS....

we delete dell devices hba then we do ZFS at the end

I use 2 3 nvems and ram is very important to me so I use btrfs and LVM-thin

We are definitely not go with Hardware RAID for ZFS. Actually the other server does not have any RAID controller. It only has a HBA card. So we have to go with ZFS as we cannot go for RAID. My question is, should 16GB free RAM for ZFS is fine to work with 8TB zfs storage? How much CPU core should I leave free for ZFS?

By default ZFS uses up to 50% of whatever RAM is homed in the server. So if your host has 32GB RAM, ZFS can and will use up to 16GB if it is free.
However consider at least 2GB per 1TB of Storage and also check if you want to change some config parameters of ZFS. More RAM in ZFS, more speed. RAM is still comparable cheap... so if you planned your Server with 64GB RAM for VMs, I would at least put 96 or 128GB in, if I plan to use ZFS for Storage, even more if ZFS with Parity is used...
