I have 48gb memory.

My question is I have setup my KVM with memory 10GB for exchange server but its only showing 1.98GB memory in my windows 2008 r2 x64 VM which is running exchange server 2010, please advise if I am missing something.

If you changed it from 2GB to 10GB you need to shutdown the VM, then start it for the change to take place.

I have never seen a Windows VM not detect the correct RAM setting in Proxmox but I also have never set it to 10GB.
The highest I have ever set is 8GB.

Yes it worked, thanks - I didnt realize that ;)

I am just testing Exchange Server, can we run Exchange Server 2010 in Virtual Environment ?

yes.

I run multiple MS SQL Servers inside Proxmox, so I would think Exchange Server would be fine too.

One thing to consider is that disk IO will be slower inside the Virtual server than running natively.
I use the virtio drivers from Fedora and set the option cache=none to get the best performance possible.
