Windows 10 Media server PC conversion to Proxmox

Hardware:
Dell tower 3620 w/ Intel Xeon using raid in bios
Nvidia quadro k2200
Internal drives:
250gb ssd with Windows 10 OS
10tb ntfs Hdd for security cam video storage
8tb ntfs Hdd for plex media storage
500gb NVME drive

I currently have a Windows 10 machine that runs my security cam and plex media server that uses the GPU to help with processing cams and media.
I wanted to migrate the OS over to the nvme but I figure I would try and start fresh with proxmox since I ran into issues booting when trying to convert the bios drive from raid to ahci.
I want to keep the windows 10 ssd functional during this time while I work on getting proxmox operational.
I am planning on installing proxmox on the new nvme(zfs) with the VMs on the same drive.
Eventually once all the VMs is up and running I would move the proxmox install over to the SSD and keep the VMs on the nvme drive. Would this migration be easy to do?
Other questions I have...
1.Would it be better to install proxmox on a USB drive temporarily and install the VMs on the nvme drive until I can migrate it to the SSD?
2. Should I convert the plex drive from ntfs to ext4 or just mount the drive as ntfs?
3. Would I need to patch my GPU to allow vgpu access so that the windows VM and plex lxc be able to both use it?
