Want VM to 90% of host resources

But sometimes it takes another human for something to make sense.

Rather than install mariadb on a blade, I decided to install it on proxmox to have the flexibility of virtualization.
Proxmox is running on a blade that has two E5-2697v2 CPUs and 256GB of memory and SSD disks.
The main vm is a mariadb database and if any vms are added, they will be very low resource users.

So basically, I want to give the DB vm as much of the blade resources as I can.
Right now, I've given the vm 128G of memory but how should I handle the CPUs? I'd like to give it as much as possible as it's a high usage DB.
I have 48 cores to work with.
