VM Windows Server won't start after backup stop mode

Hi,
i have an host with PVE with 3 VMs (one linux, one win srv 2022 for the erp, one win srv 2022 for other services), the VM containing the ERP (VM 101) after the backup occurred on 28/12/2023 04:00:00 stopped working. This thing happened two times with two different host on 27/12/2023 and on 28/12/2023. Both of them now boot and go straight to recovery environment of windows. I extracted the event viewer file to analyze it and they don't report any error. No modification has been done in the last three months. This host backup regularly in stop mode to the proxmox backup server at 04:00 every day.
Below there are logs and other info, tell me if more information are necessary and as always THANKS IN ADVICE.
I attached the log of the host, inside the log there are a lot of split lock that i removed to improve readability.

Can someone help me please?
i'm quite worried about it and thinking of migrating to hyper-v since i can't restore these two VMs almost every 3 days, i'm scared to backup these VMs. Meanwhile i updated one of the two hosts to the latest PVE 8 version and the corruption happened again one hour ago.
EDIT: as the last time that it happened i have the folder windows/system32/config almost empty
EDIT2: when it happens the VM stop for backup, perform the backup and when it starts again it boot to recovery environment and i found a selection of the language to start the recovery environment of windows
EDIT3: i try to tag @fiona since you helped me last time and we solved the problem quite fast; sorry for the three edit but i'm desperate

UPDATE: the VM that loses the file inside config folder of windows now won't boot if disks are setup in SCSI or VirtIO but must be in SATA or IDE to perform boot correctly.
